My favorite creamy dressing 🧀

Hey, there!

How do you feel about blue cheese? There's a good chance you have a little nose crinkle going on. I get it! Blue cheese is funky and tangy. It smells weird, and it's covered in mold. Are we really supposed to eat mold?!

A long time ago, I lucked out on my dream job. I worked as a cheesemonger at a grocery store with a MASSIVE cheese selection (over 700 varieties). It was like a rapid-fire training in cheese, and I loved it!

The thing that surprised me the most was just how much I fell in love with blue cheese. I liked it before, but it quickly became my favorite type of cheese.

Blue cheese is really particular. Each variety must be cared for differently, and there were such drastic changes in flavors! Some were salty and sharp, and others were mild and sweet.

(If you ever find Fourme au Moelleux at a cheese shop, this is my all-time favorite blue cheese!)

One of my favorite options was gorgonzola. It's a mild, gentler Italian blue cheese that can sometimes be slightly sweet and creamy! In the summer, I like to get a wedge of gorgonzola dolce and eat it like a dip with fresh grapes and a crusty French baguette.

Fortunately, you can find good blue cheese in cheese cases all year long, including gorgonzola. I like to mix it with red wine vinegar, lemon, honey, and olive oil to make the most delicious, creamy gorgonzola dressing!

It's lovely in the winter with sweet roasted delicata squash and pear or apple, but it's also lovely in the summer with ruby red cherries or strawberries.

This salad dressing is a constant staple in our fridge and a nice homage to my cheesy past (literally). Enjoy!
